My Cookie Recipe!
Ingredients
- 25 g unsalted butter (unmelted)
- 50 g granulated sugar
- 200 g light brown sugar
- 1 large egg + 1 yolk
- 1 tsp vanilla extract
- ½ tsp kosher salt
- ½ tsp baking soda
- 200 g all-purpose flour
- 150 g chocolate mix-ins
- 1 tbsp fine instant coffee (optional)
- Flaky sea salt, for sprinkling (optional)
Preparation
- To prepare these cookies, you must first prepare your mind.
- Melt the butter in a saucepan on low and let it slowly simmer until it’s golden with a slightly nutty smell.
- Mix in the sugars (and the instant coffee, if using).
- Once it has cooled slightly, mix in the eggs and vanilla.
- In another bowl, add the salt, baking soda and flour, and mix.
- Mix the wet and dry ingredients together.
- Chop up your chocolate into lots of different sizes (it makes it nice), then fold it into the dough.

Rest the dough in the fridge for a day.
- Set the oven to 180°C fan-forced.
- Make egg-sized balls of dough, place them on a baking-paper-lined tray and bake for 12 minutes.

From that point, every 5 minutes take them out of the oven and drop the tray from about 10 cm in the air a few times, knocking the air out of them. This makes them so chewy and yummy. Keep doing this until they are golden brown, then take them out and sprinkle with flaky sea salt.
- Let them cool. They’re pretty much toffee when they’re hot, so if you touch them they will give you a 3rd-degree burn.
